Philly Cheese Steak Sliders with Leftover Roast Beef

A 2.5 to 3.5 pound beef roast can be used to create a couple of meals for a family of 4 to 6 people. Cook the roast in advance (the slow cooker is perfect for this) and shred the beef into small pieces. Then get creative to make a few different meals!

In today's recipe, we're making Philly Cheesesteak Sliders made with leftover roast beef. There's something about the mix of beef, caramelized onions & peppers, and melted cheese that makes these sandwiches so amazing!
Try different cheese for a fun twist! We used Klondyk gouda (tastes like Swixx Cheese) and herb gouda from Sylvan Star Cheese - both added such delicious flavour!

Philly Cheese Steak Sliders with Leftover Roast Beef Recipe
Ingredients:
- 12 small buns or 8 medium buns, sliced in half
- 2 to 3 cups leftover roast beef, shredded (find beef roast here)
- cheddar, gouda, or swiss cheese, sliced
- garlic aioli for drizzling on top (recipe here)
- 1 white or yellow onion, sliced into strips
- 1 green, red, or yellow bell pepper, sliced into strips
- 1 to 2 tablespoons bacon grease, lard, or butter
Instructions:
Preheat a cast iron pan over medium heat. Melt the bacon grease, lard, or butter in the pan. Add the onions and saute for a couple of minutes before adding the bell pepper strips. Stirring frequently, cook the onion & pepper mixture until soft and lightly caramelized.
Preheat the oven to 375F.
Season the shredded beef to taste with salt & pepper or an all-purpose seasoning of your choice.
Place the bun halves side by side on a baking sheet. Lay cheese slices onto half of the buns and spoon the onion & pepper mixture over top. Go ahead and omit the onion & pepper mixture for those in your family that don't love them! On the other half of the buns, spoon the roast beef onto the buns. Drizzle garlic aioli over the roast beef.
Transfer the baking sheet to the oven and bake for 10 to 15 minutes until the cheese is melted and bubbly. Remove from the oven and allow to cool for a few minutes. Now it's time to bring the bun halves together: place a cheese covered bun half on top of the roast beef bun half. Repeat for all buns.
Serve with your favorite salad or pickled veggies and enjoy!
