Tomato Basil Salad
My sister-in-law introduced us to this tomato basil & cheese salad a few years ago and it's a favorite for adults & kids alike!
Every time I smell the fresh basil in the garden, I deeply CRAVE this salad!
It's super easy & quick to make and tastes even better when the tomatoes & basil are fresh from the garden. This time of year, I have to settle for tomatoes from a greenhouse but there's lots of basil in the garden!
You can sub in dried basil if it's off-season. And use any cheese that you like. We'll use whatever we've got on hand - mozza is our favorite but cheddar works well too.
Fresh Basil & Tomato Cheese Salad Recipe
Ingredients:
- 5 medium to large tomatoes, sliced
- 5 to 8 basil leaves, chopped roughly
- mozzarella or white cheddar cheese, cut into bite-size slices
- balsamic reduction (we love Nonna Pia's)
Instructions:
On a serving tray or plate, place the tomato slices around the plate in a single layer. Place the slices of cheese on top or in between the tomatoes. Sprinkle the basil pieces evenly over the top of the tomato cheese mixture.
Drizzle the balsamic reduction over top of the tomato salad. There is no "right" amount. You can adjust this to your taste.
Serve with tongs.
