Rhubarb & Mint Mojito with Rhubarb Simple Syrup
It's starting to feel like summer on the farm here in Alberta.
And that means it's mojito season!
I fell in love with mojitos in Cuba a few years ago. So every summer, we make sure to grab a mint plant from the greenhouse so we can have summer mojitos in the garden or on the deck after a day of getting dirty in the garden or working on a farm project.
When we made rhubarb simple syrup earlier this week, I thought, oh man, this would taste good in a mojito.
So this recipe was born.
And, I kid you not, rhubarb mojitos are to die-for!
Rhubarb & Mint Mojito Recipe with Rhubarb Simple Syrup
Ingredients:
- 1 can club soda (355 mL)
- 2 tablespoons lime juice
- 2 to 3 tablespoons rhubarb simple syrup
- 2 to 4 mint leaves, crushed in a mortar & pestle
- 4 ice cubes
Instructions:
Mix all ingredients in a glass. Enjoy!
