Pulled Pork BBQ Stuffed Potatoes (Plus slow cooker baked potatoes)

One 3 lb pork shoulder roast can be turned into 3 meals for a family of four ... so plan for leftovers! These pulled pork BBQ stuffed potatoes are a delicious way to use those leftovers! Plus, baked potatoes made in the slow cooker are a super easy way to prep supper while your at work or busy all day!
How to make baked potatoes in the slow cooker:
Scrub your potatoes in warm water and cut in half. Keep the two halves together and wrap in tin foil, rolling the edges to make them easier to unwrap after they are cooked. Place all the foil wrapped potatoes in an appropriate sized slow cooker and cook on low for 6 to 8 hours or high for 3 to 4 hours.
Pulled Pork BBQ Stuffed Baked Potatoes Recipe
Ingredients:
- 7 medium potatoes
- 1/2 cup sour cream
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 4 tablespoons milk or cream
- 1 tablespoon butter
- 1 cup pulled pork, chopped small (made from pork shoulder roast - recipe here)
- 3 tablespoons barbecue sauce
- 1 1/2 cups grated cheddar cheese
- 2 green onions, diced
Instructions:
Preheat your oven to 350F.
Cook your baked potatoes (see directions for slow cooker baked potatoes above), then unwrap and allow to cool for ten minutes. Dig out the flesh of potatoes and scoop into a bowl. Mash the potato with a fork or potato masher, then add sour cream, salt, garlic powder, milk/cream, and butter.
Place the potato skins into a greased 9x13 baking dish. Fill each potato skin with the mashed potato mixture.
Mix the pulled pork with barbecue sauce of your choice. You may want to warm up the pulled pork a bit to make it easier to mix with the barbecue sauce. Sprinkle the pulled pork over top of the potatoes, then top with grated cheddar and onions.
Bake for 15 minutes or until the cheese is bubbly.
