Pair this cast-iron version of cornbread with pork chili for a delicious comfort meal! Making your cornbread in a cast iron pan gives the cornbread a delicious crispness!
- 1 cup flour
- 1 cup yellow cornmeal
- 2/3 cup sugar
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/3 cup melted butter, lard, or vegetable oil
- 1 large egg
- 1 cup milk
Grease a 9 inch cast iron pan with lard, bacon grease, or oil. Preheat oven to 400F.
Mix dry ingredients in a large bowl. In a medium bowl, mix liquid ingredients. Add the liquid to the dry ingredients and mix until mixture just comes together. There may still be lumps.
Transfer batter into the prepared pan and bake for 20 to 25 minutes until toothpick comes out clean. Remove from oven and let cool for 10 to 15 minutes before serving.
Pairs great with pork chili!
