Cheesy Hot Taco Dip with Ground Pork or Beef

Okay, so, you know when you find that pack of cream cheese hiding in the back of the fridge and you suddenly have a craving for an amazing dip??

Only me?  Lol.

Okay, so one hot tip for meal prepping is to cook DOUBLE the amount of meat, especially if it ground pork or beef (or bacon!) so you can incorporate the extra meat into a dish later in the week.

This week, we cooked a pound of ground pork and a pound of ground beef.  Half of the mixture went into a soup (we used this amazing soup mix from Souptacular soups that we carry in the farm store).  Then the 2nd half was tucked in the fridge for later.

This was the dip recipe we created ... a delicious taco-ish hot cheesy dip! Serve it warm with tortilla chips or crackers!

Cheesy Hot Taco Dip with Ground Pork or Beef Recipe

Ingredients:

  • 1 block cream cheese (approx. 250 grams)
  • 1 lb ground pork or beef, cooked & crumbled
  • 3 cups grated cheddar, monterey jack, or a combination of cheeses
  • 1 cup sour cream
  • 1 cup salsa
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • chopped green onions & tomatoes, for topping (optional)

Instructions:

Preheat the oven to 375F.

Soften cream cheese at room temperature for an hour or so (or soften in the microwave for about 30 seconds).

In a large bowl, mix together all the ingredients.

Transfer to a casserole dish and bake for 20 to 30 minutes until bubbly.  Let cool for 5 minutes before serving.

Serve with tortilla chips & crackers.
