Top Five Ways to Use Leftover Roast Beef
There's nothing better than a delicious roast beef dinner with all the fixings!
But there always seems to be leftover roast beef. In our house, we aren't big fans of eating the same meal twice. But we do love the challenge of turning leftovers into something new & exciting!

Philly Cheese Steak Pizza
Combine chopped roast beef with sautéed bell peppers & onions, grated mozzarella, swiss, or cheddar, and barbecue sauce or ranch slathered homemade pizza crust, and you've got a delicious Philly cheese!
Cheesy Potato Beef Bake
Peel & slice potatoes. Drizzle with olive oil and season with salt and pepper. Place the potatoes in a deep baking dish making sure to line the edge of the dish with potatoes to make a "crust" around the edge. Once cooked, top with chopped roast beef and a homemade cheese sauce and bake until bubbly.
Beef & Barley Soup
Don't forget to make beef stock once you remove the roast beef from the pan. This can be accomplished by adding water to the drippings and simmering for a couple of hours. Store the beef broth in the fridge or freezer until ready to use.
To make the soup, you just need your beef broth, veggies, pearl barley, and leftover roast beef. A simple way to make a nourishing meal for your family.
Beef Enchiladas
Our family absolutely loves enchiladas! We will use leftover roast beef, beef brisket, or shredded whole chicken to make enchiladas. Homemade enchilada sauce is easy to make with a few on-hand ingredients.
Fill flour tortillas with chopped leftover roast beef & grated cheddar, roll up, and place in a deep 9x13 baking dish. Pour enchilada sauce over tortillas, top with additional grated cheddar, and bake until the cheese is bubbly.
Enjoy with salsa, sour cream, guacamole, microgreens, and shredded lettuce as toppings.
Roast Beef Sliders
Make or buy slider buns and top with sliced roast beef and mozza or swiss cheese. Bake in the oven long enough to melt cheese. Serve with au jus made from the roast beef drippings.
