Winter Apple Crisp

Happy Spring!  We welcomed the first day of Spring last Sunday with a wicked snow storm!  When we checked the weather app Saturday night, it called for 5 to 10 cm of snow so when we woke up on Sunday morning to no snow, we were ecstatic.  THEN by 9 am, light snow started to fall.  And by noon, the flakes were huge and fluffy and coming down fast.  And the wind was whipping!

The snow was actually a great thing!  Not only does the snow give us an added boost of moisture in the spring, but it also meant that the kids were able to finish up their "community service" piece for 4H.  Every year, 4H clubs across the province choose some way to volunteer to give back to the community.  This year, the kids in the 4H club decided to shovel in their community.  It's another great component of the 4H program - I can't say enough about how much I love 4H to help grow great values in our kids!

Anyways, we also welcomed a few more baby lambs on the farm over the last week.  Spring really feels like it has arrived with all the cuteness of these little cuties.  If you don't follow Lazuli Farms over on Instagram, now would be the perfect time!  We've been sharing lots of videos of the lambs in our stories!  They are just too cute to not share!

During the snow storm last Sunday, I dug out my old recipe box and wanted to use up some of the apples we have tucked in our back storage room that were starting to look a little ragged.  Apple crisp is the perfect way to utilize those slightly soft or bruised apples from the cellar, storage room, or the bottom of the fridge - wherever you keep them!  We've dubbed this recipe "Winter" apple crisp for that reason!

Our 8 year old, Greyson, has made this recipe a few times.  The hardest part is peeling & cutting the apples - the rest takes less than five minutes to put together!

Don't forget the vanilla ice cream to put on top of your fresh, out of the oven apple crisp!  There's nothing better than that!

Winter Apple Crisp Recipe

Ingredients:

  • 4 to 5 apples, peeled & sliced into thin pieces (4 medium-large apples or 5 small-medium apples)
  • 2 tablespoons water
  • 1/4 cup white sugar
  • 1 tablespoon lemon
  • 1 teaspoon cinnamon
  • 1 cup all purpose flour
  • 1/2 cup large flake oats (or small flake if preferred)
  • 1/2 cup brown sugar
  • 1/2 butter, softened or lightly melted

Instructions:

Grease a 8 x 10 inch baking dish (or something of similar size). 

Preheat the oven to 350 F.

Peel & cut apples.  In a small bowl, mix apples with water, lemon juice, cinnamon, and white sugar.  Pour into the baking dish and evenly distribute them across the dish.

In a medium bowl, mix together flour, oats, and brown sugar.  Add  butter to dry ingredients and mix in.  Sprinkle mixture over the apples.

Bake for 40 to 60 minutes (until apples are soft and topping is golden).
