Best Freezer Meals with Pork & Chicken
Hey all you busy Moms!
Are you like me and find yourself staring blankly into the fridge or pantry at 6 o'clock trying to figure out what to make for supper?
You didn't pull any meat out to thaw. Or you did, but just don't have the energy to cook after a long day at work and running kids to activities.
Okay! I am not alone!
This happens to me a LOT! So every few months, I carve out a day to get in the kitchen and make some freezer meals. I try to stock the freezer with a number of ready to cook or ready to heat meals for my family.
I wanted to share a few of my favorite freezer meal ideas to help inspire you to check out Pinterest, load up on ingredients, and get to work in the kitchen!
A few of my favorite freezer meals made with Lazuli Farms chicken or pork:
Fully cooked, ready to eat soups freeze so well and are a breeze to heat up for supper. I like to freeze soup in a family size container OR in individual sized medium freezer bags. I pop the ziploc bag out of the freezer in the morning and take it to work for a yummy, homemade lunch.
My go-to soups are baked potato soup (with bacon), leek, potato & bacon soup, stuffed pepper soup (made with crumbled sausage), and chicken noodle soup.
2) Pulled pork
There are some great recipes out there for putting a pork shoulder roast into a ziploc bag, adding a marinade of some sort, labeling, and freezing the pork roast. Pop the roast out of the freezer the night before to thaw in the fridge, then put the roast and marinade in the slow cooker for the day. When you get home, shred the pork and pair with buns and coleslaw for traditional pulled pork sandwiches or pair with the fixings for pulled pork tacos.
3) Chicken enchiladas
I LOVE Mexican inspired food! My favorite restaurant is in Banff ... it's the Magpie & Stump. This hole in the wall eating establishment serves delicious mexican fare. Did you know our family could eat soft tacos, quesadillas, and enchiladas everyday?
I love having a dish of fully cooked chicken enchiladas with accompanying enchilada sauce in the freezer. Easy, peasy, lemon squeezy.
4) Breakfast wraps with sausage or bacon
By far, these are the first to go every time I put together freezer meals!
Homemade hashbrowns, sausage that has been removed from it's casing and fried along with diced onions and bell peppers, cheddar cheese, and scrambled egg, all wrapped in a flour tortilla ... makes for a quick breakfast or lunch.
5) Chicken & Rice Casserole
I like to mix cooked, cubed chicken, sauted onions & peppers with cooked rice, a couple of cans of diced tomatoes, and seasonings. Freeze the quick meal in casserole dishes for an easy supper.
